Sourdough Honey Wheat: Soft Sandwich Loaf with Real Whole Wheat

A 50% whole wheat sourdough that stays soft for sandwiches. Honey adds sweetness and tenderness.

Short answer: combine 50% bread flour and 50% whole wheat with 30g honey and a splash of oil. Bake in a pan for a soft, sliceable sandwich loaf with real whole wheat character.

The recipe

For one 9x5 loaf:

  • 250g bread flour
  • 250g whole wheat flour
  • 380g water (76%)
  • 100g active starter
  • 30g honey
  • 30g neutral oil or melted butter
  • 10g salt

Method

Mix

Combine all ingredients. Mix until shaggy. Autolyse 30 min.

Knead or fold

Knead 5 min by hand or do 4 sets of folds over 90 min.

Bulk

Bulk 4–5 hours at 75°F.

Shape

Tip dough onto a floured surface. Pat into a rectangle. Roll up tight, pinch seam.

Place seam-down in greased 9x5 loaf pan.

Final proof

1.5–2 hours at 75°F until dough rises just above pan rim.

Bake

Preheat to 400°F.

Optional: brush top with milk or egg wash.

Bake 35–40 min, internal temp 205°F.

Cool 30 min in pan, then cool fully on rack.

Why 50% whole wheat (not 100%)

100% whole wheat:

  • Dense
  • Difficult sandwich texture
  • Pronounced bran taste

50% whole wheat:

  • Soft enough for sandwiches
  • Real whole wheat flavor
  • Healthier than white
  • Still pleasant texture

50% is the sweet spot for sandwich whole wheat.

Oat honey wheat

Add 50g rolled oats. Replace 50g flour. Top with more oats.

Sunflower seed wheat

Add 80g sunflower seeds (toasted) at fold 2.

Add 50g of mixed seeds (sunflower, pumpkin, flax, sesame).

Maple wheat

Replace honey with maple syrup. Subtler sweetness.

Cinnamon raisin wheat

Add 1 tbsp cinnamon + 100g raisins.

Skip the honey for less sweetness. More savory; better for sandwiches.

Honey wheat keeps:

  • Counter, cloth bag: 4 days
