Can You Make Sourdough Without a Starter?
Technically no — but here's how to get sourdough-style bread fast, and how to create a starter from scratch with just flour and water.
True sourdough requires a starter — that living culture is what makes it sourdough — but you can make a starter yourself from just flour and water in about 7–14 days, or bake "sourdough-style" bread faster with a few shortcuts. There's no real sourdough without wild fermentation, but getting there is easier than it sounds.
You can't fake the culture
The defining feature of sourdough is fermentation by wild yeast and bacteria. Without a starter (or a preferment that's been wild-fermented), it isn't sourdough — it's yeast bread, possibly with added acid for tang.
Option 1: Make a starter from scratch (recommended)
It costs nothing but time and a little flour:
- Day 1: Mix 50g whole wheat or rye flour with 50g water. Cover loosely.
- Days 2–6: Discard most of it daily and feed 50g flour + 50g water.
- Days 7–14: It becomes bubbly, doubles after feeding, and smells pleasantly tangy.
- Now it's ready to bake with.
A starter is a one-time setup that lasts indefinitely with feeding.
Option 2: Get one from someone
Bakers love sharing starter. Ask a friend, a local baking group, or a bakery. A mature donated starter skips the 1–2 week wait entirely.
Option 3: "Sourdough-style" shortcuts (not true sourdough)
- Yeasted bread + a long cold ferment develops some tangy complexity.
- Add a little plain yogurt or buttermilk for a faint tang (it's not the same as fermentation).
- Dried/commercial sourdough starter packets rehydrate into a real starter.
